I’ve always wanted to try out the recipe for Engagement Chicken, which is a famous recipe from an article in Glamour Magazine from many years ago that became notorious for leading to the couple who shared it getting engaged shortly after. That wasn’t my goal when I made it, but I’d heard it was a perfect way to cook an entire chicken and have chicken for several meals that would last the whole week. So I tried it out.
It’s a really simple recipe that uses lots of lemon and garlic and herbs to flavor the chicken.
It turned out really juicy and flavorful and delicious, and I was able to use the chicken for salads and enchiladas and a couple other dishes. It’s quite a bit more work to have to take all the meat off the bones than it is to just buy chicken breasts, but it is a whole lot cheaper, and has more flavor.
