Food Friday :: Pumpkin bread with Maple Glaze

I swear, Pinterest is going to be the death of me. Not only is it addictive with it’s beautiful imagery of fashion and interiors, the photos of food make me create shopping lists when I can’t sleep and then make fattening snacks the next day and blame it on the fact that I need a “Food Friday” post.

I got this recipe from Pinterest, and almost followed it properly… I had one of those giant 28 oz. cans of pumpkin and I can’t really justify throwing away perfectly good pumpkin so I dumped the whole thing in. I didn’t have any apple juice so I thought it would make up for the moisture deficit.

What it actually did was make it extra pumpkin-ey and less sugar-ey, which is actually okay, but I had to make a glaze to drizzle over it or else it would just taste like bread.

That night i was watching Food Network’s “Diners, Drive-Ins and Dives” and saw the Thanksgiving Special where one of the restaurants was making a pumpkin bread pudding (why didn’t I make that????) and drizzled it with a rum sauce, composed of cornstarch, sugar, cream and rum. I didn’t have any rum (I know, weird, right?) so I used maple extract and it was kind of amazing. I may have also thrown a pat of butter in there for some creaminess.

So this week I had a morning snack with my coffee while I edited photos.
